New dish.


The other day I was introduced to the food staple of Quebec, Poutine.  According to the Wiki, it is pronounced something like "poot sin."  Traditionally, it consists of french fries topped with cheese curds then smothered in gravy.  The version that I had was called "Disco Fries" and included beef, mozzarella cheese, green onions and beef gravy all atop french fries.  It was heaven on a plate.  So, being somewhat health conscious, I decided to try my own interpretation using baked fries and chicken.  I believe the key to this dish is the gravy, and making sure that it is hot enough to melt the cheese. 

So, here's the run down...
I baked potato strips then topped them with caramelized onions, sauteed chicken, mozz cheese (although, I think that a sharp cheddar might work better), green onions and finished  it off with  homemade chicken gravy.  Dear god it was good!

For my next Poutine production, I would like to try a vegetarian edition using mushrooms and a mushroom based gravy.   The fun thing about this dish is that you can get very creative or keep it super basic.
